Herring salad, just the right thing for the carnival season
Herring salad is traditionally served in Malmedy and the surrounding area during the carnival season since 1870. At the time, it was believed that the salad had a healing effect on the stomach after boozing late into the night.
In fact, this is actually true! Herring salad contains a lot of minerals and can therefore restore the electrolyte balance, so it's just perfect for the carnival season!

Here is the recipe for a delicious homemade herring salad
Ingredients:
6 herrings, 1 large jar of beetroot in its own juice, 1 celeriac, 3 onions, 1 bowl of potatoes, 1 apple, 6 hard-boiled eggs, 750 g soup meat, 500 roast pork, 1 cup of oil, jarred pickled onions, 1 jar of gherkins, possibly a few nuts.
Preparation:
- prepare a good vegetable stock (carrots, celery, potatoes, leeks, herbs...) to boil the soup meat until it is nicely soft,
- fry the piece of pork in a pot,
- boil the peeled potatoes, celery and eggs,
- let everything cool down,
- Chop the onions, the drained gherkins, the apple, the cooked celery, half the turnips and the pickled onions and crush the walnut kernels,
- Cut both kinds of meat, the boned herrings, the other half of the turnips, the hard-boiled eggs and the potatoes into very small cubes, keeping a few slices of the eggs, onions and gherkins for the garnish,
- Mix everything in a bowl, season with salt and pepper to taste.
- Depending on the desired colouring, add beetroot juice.
Leave to marinate in a cool place, covered with a cloth, for one to two days.
Arrange the herring salad in bowls and garnish with the hard-boiled eggs, onions and gherkins cut in half lengthwise.
